NEW YORK: ‘Ello, Governor!

From the ace team behind Colonie and Gran Electrica comes Governor, a new nose-to-tail restaurant in DUMBO. This airy, 60-seat space is named in homage to 19th century industrialist/inventor of cardboard Robert Gair, whose nickname around the neighborhood was (you guessed it) Governor. One wall is devoted to artworks featuring this captain of industry tricked out like Chairman Mao, Dali, Teddy Roosevelt and other luminaries, while another features a lush vertical garden. Sit downstairs and you’ll get dinner and a show, as Chef Brad McDonald works in an open kitchen, creating unique dishes made using local and seasonal ingredients. The carefully curated menu is divided into Snacks, One, Two and Three and features delights such as pork neck for two with peaches and elderflower, chilled lobster consommé, crispy blowfish tails with pickled onion aioli, and beef tartar with mussel emulsion. The butter is churned in-house, the bread is baked fresh and the hipster wait staff is actually nice.
